Fruit Salad with Allégro Soft ripened


6 ounces (170 g) Allégro Soft ripened cheese
1 green apple, cut into thin slices
Lemon juice
1 basket of strawberries, hulled and sliced in half
1 cantaloupe, scooped out
20 green grapes
2 tbsp (30mL) fresh mint, chiseled

Dressing Ingredients:
1/2 cup (125mL) plain yoghurt
1/4 cup (60mL) Maple syrup


In a bowl, place apple slices with some lemon juice.
Make cantaloupe balls with melon spoon.
Mix together apple slices, cantaloupe balls, strawberries, grapes and mint and toss.
Put dressing Ingredients in a bowl and whisk.
Pour dressing over salad and toss.
Slice Allégro Soft ripened cheese.
Lay over fruit salad.
Refrigerate one (1) hour before serving with shortbreads.
