Cream of Tomato with Allégro 4% Herbs & Spices


2 chopped onions
2 cloves garlic, chopped
2 tbsp (30 ml) olive oil
2 cans, 19 oz (540 ml) each, cubed tomatoes, not drained
1 small cubed, peeled uncooked potato
¼ cup (50 ml) fresh basil, chopped
Salt and pepper
2 cups (500 ml) milk
¼ cup lb (125 g) Allégro 4% Herbs & Spices cheese cut in small cubes
Fresh basil to garnish


In a saucepan, cook the onions and garlic in the oil until tender. Add the tomatoes and potato. Bring to a boil, cover and gently simmer for 25 minutes or until the potato is soft. Add the chopped basil, salt and pepper to taste. Purée in a blender or food processor until smooth, return to sauce pan. Add milk. Reheat without boiling. Garnish each portion with Allégro 4% Herbs & Spices cheese cubes and fresh basil and serve.
