BBQ Grilled Vegetable Salad with Allégro 4% Probio


1 eggplant, sliced lengthwise
2 zucchini, sliced lengthwise
1 yellow or orange pepper cut in strips
1 red pepper cut in strips
1 red onion cut in quarters
200 g Allégro 4% Probio cheese sticks

5 French shallots, finely chopped
75 ml (1/3 cup) apple cider vinegar
10 ml Dijon mustard
60 ml extra virgin olive oil
Salt and freshly ground pepper


In a bowl, mix all ingredients of the vinaigrette. Set aside.
Brush the vegetables with the vinaigrette, then grill on barbecue.
Quickly divide the grilled vegetables onto four serving plates; place Allégro 4%
Probio cheese sticks on top, which will melt slightly.
Drizzle vinaigrette over top and serve.
