Allégro Soft ripened Supreme Spinach Salad


6 oz (170 g) Allégro Soft ripened cheese
6 oz (170 g) spinach leaves, coarsely cut
2 oranges, cut into halved quarters* or a can of drained quartered mandarins (284ml/10 oz).
20 green grapes, halved
1 1/2 oz (40 g) minced almonds
1 tsp. (5 ml) finely chopped fresh tarragon

(*Note: orange quarters must be peeled, skinned, separated and cut in two.)

Ingredients for dressing:
6 1/2 oz (175 g) plain yoghurt
1 tbsp. (15 ml) fresh parsley
2 tbsps. (30 ml) orange juice
1 garlic clove
Salt and pepper to taste


Arrange spinach leaves on a serving plate.
Add orange, green grapes, almonds and tarragon. Mix.
To prepare the dressing, put yoghurt, parsley, orange juice, garlic, salt and pepper in a food processor and reduce to purée.
Pour dressing over salad and toss gently.
Cut Allégro Soft ripened cheese into approximately 16 equal parts and arrange over salad.
Serve with nut bread.
