Allégro Soft ripened Puff Bites


85 g (3 oz) Allégro Soft ripened cheese
4 sheets of Phyllo dough
75 ml (5 tblsps) melted butter
80 ml (1/3 cup) roasted red pepper, cut in large pieces
30 ml (2 tblsps) Pesto
Salt and pepper to taste
80 ml (1/3 cup) roasted pine nuts
Chopped chives


Preheat oven to 190°C (375°F). Stack 2 sheets of Phyllo dough together, brushing each with melted butter. Cut into 24 squares. Place in each cup of a greased muffin tin. Do the same with the other 2 sheets. Brush with Pesto. Divide the red pepper equally into each cup. Season with salt and pepper. Cut the Allégro Soft ripened cheese into 24 equal pieces. Place each in the cups and garnish with pine nuts. Bake for 8 to 10 minutes. Garnish with chopped chives. Serve hot or at room temperature.
